Creamy Potato Soup
INGREDIENTS
3 cups cubed Red potatoes, with Skins
1 cup water
1/2 cup sliced celery
1/2 cup sliced carrots
1/4 cup finely chopped onion
1 teaspoon dried parsley
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup vegetable or chicken stock
3 tablespoons milk
2 tablespoons all-purpose flour
150 grams gouda cheese (small chunks)
METHOD
In a large pot, combine potatoes, water, celery, carrots, onion, parsley, salt, pepper and stock.
Bring to the boil over a medium heat
Step 2
Cover, reduce heat and simmer for 10 minu
Step 3
Gradually stir in milk and flour to make a smooth cream, once smooth slowly add in your cheese, stirring until melted.
For an added extra serve topped with crispy bacon
