Hasselback Poatoes
INGREDIENTS
700g of medium potatoes
1/4 cup butter, melted
1/4 cup extra virgin olive oil
3 cloves of garlic, minced
salt
black pepper
1 cup shredded mozzarella
1/2 cup freshly grated parmesan
1/4 cup finely chopped parsley
METHOD
Preheat oven to 190°
Make small slits in each potato, careful not to cut all the way through. The potato should look like an accordion.
Place the potatoes on a greased or non stick backing tray
Step 2
In a bowl, combine the melted butter, oil and garlic.
Brush the mixture over the potatoes then season with salt and pepper
Step 3
Bake for 20 minutes, the slits will start to separate and turn golden
Brush the potatoes with more of the mixture, sprinkle on the mozzarella and parmesan, bake for a further 20 - 25 minutes
Garnish with parsley and serve warm
Try adding other herbs like rosemary or topping with bacon and sour cream
