Simple Sauteed onion

You can’t go past a simple sausage in bread, oozing with onions and tomato sauce. It’s the quintessential Aussie dish, throwing a “snag on the barbie” at a mate’s house or after a game of backyard cricket. - Jason Kirk

SERVES 4 SIDES

INGREDIENTS

3 brown onions

2 tbsp olive oil or butter (or 1 tbsp of each)

½ tsp salt

Fresh ground black pepper

1 tbsp balsamic vinegar with the salt

METHOD

Slice the onions.

In a large fry pan, heat the olive oil or butter over medium high heat. Add the onion and cook for 4 minutes, stirring occasionally.

Add the salt and fresh ground black pepper and cook another 4 to 5 minutes, stirring occasionally. Taste to assess readiness and add a few pinches of salt until the flavor pops.
